2 recipes for making vegan milk chocolate at home

Who has decided to follow afeed free from animal ingredients has consciously chosen to “give up”, so to speak, to some traditional foods. What even the most inveterate vegan hardly gives up, however, is the chocolate. So here’s how to make vegan milk chocolate at home.

Why make vegan milk chocolate at home?

I advantages of homemade vegan chocolate are multiple. First we have the certainty of ingredients actually used and of the genuineness of the final product. Also, the taste it will turn out better and less fake compared to the one on the market. Making vegan milk chocolate at home is not only possible but it can even be done with two similar but different procedures. One involves the use of cocoa butter while for the second recipe it takes coconut oil and milk. The result is guaranteed whatever the procedure followed. Let’s see together ingredients and method of preparation for both recipes.

Recipe with cocoa butter

Fill a high-sided saucepan with water and bring to a boil. Insert a smaller saucepan inside the pot, it will be used for cooking cooking in a water bath. Pour into the small saucepan 1 cup of cocoa butter into small pieces and let it melt a medium flame for 2 or 3 minutes mixing. Add 3 teaspoons of maple syrup or agave. Continuing to mix, pour little by little 120 g of cocoa powder mixing all the ingredients well and dissolving any lumps. Lastly add 1 teaspoon of vanilla extract it’s a pinch of salt.

Recipe with oil and coconut milk

Mix 240 g of cocoa powder con 180ml of coconut oil until a smooth and homogeneous mixture is obtained. Again, bring the water to a boil in a saucepan and then place a smaller bowl inside this to cook the cocoa and coconut oil mixture in a bain-marie, dissolving any last lumps. Remove from heat and pour 160ml of coconut milk, which will thicken the mixture a bit. Add 1 teaspoon of vanilla extract, 240 g of icing sugar and a pinch of sale. Continue to mix until the mixture is smooth and finally free of lumps.

How to decorate vegan chocolate

Before moving on to the final stage of preparing our vegan milk chocolate, we can decorate it to our liking. Off to the imagination, then: let’s add hazelnuts o almond flakes, Red fruits o pistachio grain or even of puffed rice. We can decide to proceed in two ways:
let’s mix these last ingredients in the chocolate compound obtained following one of the two recipes described above e then we pour all in one mould;
• alternatively, before we pour the chocolate cream in a silicone mold or in a pan lined with parchment paper e then we decorate according to our taste.
Finally, as a last step, we place the mold with the chocolate in the freezer for 10 minutes. After this time, the chocolate will have set and cooled and will therefore be ready to be removed from the mould.
