Beetroot pancake rolls with a kaimak of spring colors #Shrovetide 2023
Step by step cooking recipe
Beets can be boiled in advance.
Cut the beets into small pieces and place in a blender bowl.
Grind the beets with an immersion blender.
Add milk, egg, beat until smooth.
Pour in kefir, mix.
Put the resulting mass in a bowl, add salt, sugar, mix.
Add sifted flour, stir until smooth. leave the resulting dough for 30 minutes.
Bake beetroot pancakes in a preheated pan, each time greasing with a small amount of vegetable oil.
Let the pancakes cool completely.
Lubricate each pancake with kaimak (you can sprinkle with paprika, a mixture of peppers), sprinkle with fresh basil leaves, roll into a roll.
Put the resulting rolls in the refrigerator for a couple of hours (I spent the night).
Cut into portions with a sharp knife and serve.
Bright beetroot rolls with kaimak and basil are ready.
