Biscuit with berries (curd)
. Prepare dough:
• mix cottage cheese, softened butter and sugar
• lightly beat the egg with salt
• add ¾ of a beaten egg and vanilla sugar to the curd mass – mix
• mix flour and baking powder
• add flour to the curd mass – knead a soft and non-sticky dough
. Wrap the dough in cling film and set aside for 5-10 minutes
. Prepare the filling:
• mix berries, sugar and starch
• mix well
. Form biscuits:
• divide the dough into 3 equal parts – remove two parts
• put the third part of the dough on a sheet of parchment paper
• roll out the dough into a round layer, 2 mm thick
• put 1/3 of the berry filling in the middle of the layer
• smooth the filling in the center without reaching 3-4 mm to the edges
• wrap the edges of the dough towards the center, leaving the middle open
• in the same way form 2 more biscuits
. Transfer the biscuits to a baking sheet
. Bake in an oven preheated to 180-200 degrees for 20-30 minutes
. Ready biscuits to cool
. Garnish with powdered sugar and/or chopped nuts and fresh mint before serving.
