Buns with cottage cheese – step by step recipe with photo
Let’s prepare yeast dough.
Warm milk, yeast, sugar, mix.
If you are not sure about your yeast, leave the mixture for 10-15 minutes until a foam cap appears, if this does not happen, then the yeast is not active and you need to use another one.
Add egg, salt, melted butter, mix.
Do not forget that all products for yeast dough should be at room temperature.
Then add the sifted flour in parts and knead the dough.
Do not rush to add all the flour that is indicated in the recipe, flour is different with different moisture content and it may need a little less or more than indicated in the recipe.
Grease the dough and bowl with vegetable oil.
Cover the dough with plastic wrap and leave warm for 1-1.5 hours. During this time, the dough should double in volume.
Let’s prepare the filling.
Put cottage cheese, sugar, protein (the yolk will be needed to grease the buns), semolina, vanilla sugar in a bowl and mix until smooth.
This is how the dough came up, you can make buns.
Divide the risen dough into 4 pieces. We form balls (about 220 g each), cover with a napkin, leave for 10 minutes.
Roll each piece of dough into a cake about 2-3 ml thick, cut the cake into 4 triangles.
Put the filling in the center of each triangle (about 1 tablespoon).
Make three cuts on one side and three on the other.
Cover the filling, form a bun.
Line a baking sheet with parchment paper or a baking mat, and arrange the buns so that there is space between them.
Cover the buns with cling film and let rise for 30 minutes.
Lubricate the buns with yolk (mix the yolk with 1 tbsp. Milk), for golden brown.
Bake the buns in a preheated oven at 180 degrees for 20-30 minutes until golden brown. Remove the finished buns from the oven and grease the hot ones with sugar syrup (to prepare the syrup: mix water with sugar, stirring, bring to a boil until the sugar dissolves).
