Canarian Lentil Stew Without Chorizo

Ingredients

  • 250 grams of lentils
  • 250 grams of pumpkin
  • 5 papas
  • 2 onions
  • 2 garlic cloves
  • 1 tomato
  • Peppers
  • Thyme
  • Cumin
  • Chopped cilantro
  • 2 tablespoons of salt
  • Olive oil

How to cook lentils quickly and easily?

The first thing we will do is peel and chop the two onions and the garlic cloves, once done we introduce it to a lamb, add a splash of olive oil and let it brown over medium heat. Meanwhile, we are going to peel and cut the tomato into small pieces. We put it in the lamb and stir well. Meanwhile, we are going to peel and cut the pumpkin into squares. Stir the onion every few minutes.

When the onion is golden, we are going to add the lentils, mix well and add the pumpkin, stir again and lower the heat. Add the water, cover the ingredients and add a little more. Raise the heat and sprinkle the paprika, cumin, and thyme on top to taste, in addition to adding salt to taste, I recommend from experience that you add 2 and 1/2 tablespoons. Stir quite well so that the ingredients are mixed and let it cook on the fire.

Next, we are going to peel, cut, and wash the potatoes well, when you have done, incorporate them with the rest of the ingredients. Stir well and let it do. Meanwhile, chop the coriander into small pieces and add it when it starts to boil.

We have to let it cook for about 45 minutes, approximately, rather, until the lentils are done since the cooking time depends on the type of lentil. Turn off the heat and let rest for 20 minutes. After this time it is ready to serve.
