Be sure to try this wonderful recipe. According to it, cherry compote for the winter is prepared without sterilization. The standard double pouring method is used, and citric acid does an excellent job of preservative.

Lemon acid –

Step by step cooking recipe
Rinse the cherries and put them in prepared jars.
Pour boiling water to the top, cover with lids and leave to warm up for 20 minutes.
Drain the water into a saucepan, add sugar, citric acid and bring to a boil again.
Pour boiling syrup into jars, roll up and leave for a day in a warm place.
