Danube wave cake with cherry
Let’s prepare the custard base for the cream.
Combine sugar, cornstarch, vanilla sugar in a saucepan.
Add the egg and mix everything well into a homogeneous mass.
Add milk, stir.
Place the saucepan over medium heat.
Cook the mixture until it thickens, stirring constantly so that the mixture does not burn.
As soon as the milk mixture thickens, immediately remove from heat, pour into a bowl, cover with cling film and let cool to room temperature.
Let’s prepare the dough.
All ingredients for the dough should be at room temperature, except for cherries.
Softened butter, sugar, vanilla sugar, salt, beat with a mixer at high speed until light in mass, until completely combined.
Add one egg at a time and beat each portion until smooth.
Sift flour and baking powder and knead the dough.
Put about 1/3 of the dough in another bowl (400 gr.).
Add cocoa, milk and mix until smooth.
This will be chocolate dough.
The bottom and sides of the form (form size 32×24 cm) are lined with parchment for baking.
We spread the light dough, level it.
Spread the chocolate dough on top and carefully spread over the entire light dough.
Then lay out the pitted cherries (do not defrost frozen ones), slightly drowning them in the dough.
Bake for 35-40 minutes in a preheated oven at 180 degrees.
Readiness is determined with a wooden skewer; when pierced, there should be no traces of raw dough.
We leave the biscuit in the form and let it cool completely (if you like a wet biscuit, then soak the cooled biscuit with sweet water or milk).
Let’s prepare the cream.
Beat the butter (it should be well softened).
Add the custard base (room temperature) in parts and beat well with a mixer until smooth.
Put the cream on the cooled cake and put it in the refrigerator to let the cream harden.
Let’s prepare the frosting.
Melt the chocolate and butter in the microwave in short pulses of 10-15 seconds, the main thing is not to overdo it, otherwise the chocolate will curdle.
Pour the frosting over the frozen cream, spread evenly.
Then, using a spatula, make wavy paths on the glaze.
Place in refrigerator to chill.
Remove the cake with paper from the mold, trim the edges, cut into pieces of the desired size.
