Eggplant caviar for the winter through a blender

You can buy a vegetable snack at the store, but it is better to cook it yourself. Don’t know how? Use this wonderful recipe and you will get delicious eggplant caviar for the winter. In order not to cut the vegetables by hand, let’s pass them through a blender.
Step by step cooking recipe
Peel the eggplant, cut into large pieces and soak in salted water for 15 minutes.
Grind eggplant, carrots, tomatoes and peeled onions in a blender.
Fry the onion in oil until golden brown.
Add carrots and simmer another 10 minutes.
Add eggplant, salt and ground pepper. Simmer for 20 minutes, stirring occasionally.
Add tomatoes and continue cooking until excess moisture has evaporated.
Pour in the vinegar, stir and remove from heat after 1 minute.
Fill prepared jars with hot caviar and roll up.
