Step by step cooking recipe
Rinse the tomatoes, peel them, cut them randomly, then pass through a meat grinder or chop with a blender.
Cut the eggplant into medium-sized cubes.
Place the tomato mass in a saucepan, bring to a boil and boil over low heat, stirring, for 15 minutes.
Place the prepared eggplants in the boiling tomato mass, add salt, sugar and vegetable oil. Mix everything well and boil over low heat for half an hour.
5 minutes before cooking, add vinegar and chopped garlic.
Pack the boiling billet in pre-sterilized jars, seal tightly, turn upside down, wrap and leave to cool completely. Store cooled eggplants in a cool, dark place.
