- 2 pumpkins of 1 kg each
- 175 grams of leeks
- 150 grams of turnips
- 200 grams of green beans
- 200 grams of kale
- 75 grams of wholemeal flour
- 2 celery with green leaves
- 2 garlic cloves
- Zest of 1/2 lemon
- 1/2 tablespoon thyme
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 tablespoon freshly ground black pepper
- 2 tablespoons grated parsley
- 1 tablespoon freshly chopped mint
- A few kale leaves
- 1 bay leaf
- 3 lemon leaves
- Olive oil
- Salt to taste
Method of preparation
We start by cutting a piece of the upper part of the pumpkin and removing the heart from it, including the seeds and a little pulp if necessary. Next, we are going to cut the leek into slices, peel, and chop the turnips, celery, and garlic. Cut the beans and kale into strips.
We heat a jet of oil and sauté the vegetables and garlic. Season with a little salt and thyme. Cover and let simmer for 6 minutes. After this time, we remove the lid and stir so that it evaporates a bit. Reserve. Mix the honey with the oil, the lemon zest, the lemon juice, and the pepper, and add this mixture to the vegetables.
Add the whole wheat flour, the parsley, and the mint, mix everything well and fill the inside of the pumpkin with the help of a spoon. Cover the upper part of the pumpkin and tie it with the help of a thread so that it is well closed.
Put some kale leaves on the baking tray, and put some bay leaves and lemon leaves on top. Place the pumpkins and cook in the oven at 200º for 1 hour and 30 minutes up to 2 hours. Remove when the pumpkin is soft and remove the thread. Taste.
