Who doesn’t like baked pasta? From north to south it is a recipe that cannot be missing from our tables, especially the Sunday. Baked pasta with vegetables is a reinterpretation of the classic recipe: no meat sauce or cheese. In their place we find seasonal vegetables and vegan béchamel.

The beauty of this dish is that it can be prepared in advance and baked just before serving. There pasta with baked vegetables however it is excellent, but above all it is very quick to prepare: let’s see the recipe together!

Before starting, a word of advice: use seasonal vegetables depending on the period in which you prepare this pasta!

How to prepare baked pasta with vegetables

  1. Cook the pasta in plenty of salted water for the time indicated on the package. Add the peeled potatoes cut into half-centimetre slices into the pasta pot.
  2. In the meantime, dedicate yourself to preparation of vegetables. Peel the carrot and remove the ends. Remove the ends from the zucchini as well. With a large kitchen knife cut all the diced vegetables half a centimeter. Wash the pepper, remove the stem, seeds and internal white filaments and cut it like other vegetables. Pick up the broccoli florets with a small knife.
  3. Warm up 3 tablespoons of oil in a large skillet and add the vegetables. Cook them, stirring occasionally 15 minutes, then season with salt and pepper. If they get too dry during cooking, you can add a few tablespoons of water.
  4. When the pasta is ready, drain it and run it under cold water to remove the excess starch and stop the cooking. Transfer it to a fairly large bowl season it with vegetables and béchamel.
  5. Mix well and transfer to an oven-safe pan. Sprinkle with breadcrumbs and cook a 200°C for 20 minutes or until a crust forms.
  6. Serve the baked pasta with the vegetables hot.

This vegan baked pasta is, like the traditional one, also good the next day, however we advise you to keep it for maximum for 2-3 days in the fridge well covered by the transparent film and warm it up in the oven a few minutes before serving. If you have used fresh products, you can also freeze everything in the freezer before putting it in the oven.
