Gingerbread in the form we know and with the usual taste appeared in Russia in the 18th century. By that time, spices imported into the country from abroad became more or less affordable. Before that, in Rus’ there was honey bread, which was baked from rye flour with honey and berries. Oriental spices began to be brought to us in the 12th century, they cost a lot of money, so honey bread with the addition of anise or nutmeg was a delicacy for the rich. Over time, as we have already said, spices became widespread, and spicy gingerbread came into wide use. There were many recipes: in some areas, gingerbread was made with plums, in others – with berries, but the main note was still honey. On sour cream
Ingredients
- Sour cream (fatty) 200-300 gr
- Egg -1 pc.
- Soda 1/3 tsp
- Vanillin – a pinch
- Sugar 100 gr.
- Flour 200-300 gr.
- Powdered sugar 50-70 gr.
Step by step cooking recipe
- Add soda to sour cream, mix and leave for 10 minutes. Add egg yolk, sugar, vanilla and sifted flour.
- Knead the dough, it should be elastic.
- On a surface sprinkled with flour, roll out the dough (you can half it) to a thickness of 1.5 cm.
- Cut out gingerbread shapes with a glass.
- Put on a baking sheet lined with parchment, put in a preheated oven (180 degrees) for 15-20 minutes.
- In parallel, prepare the glaze.
- Mix protein with powdered sugar.
- Cover the finished cooled gingerbread cookies with icing, put in the oven for another ten minutes.
With kefir
Ingredients
- Kefir – 300 ml.
- Flour – 300 gr.
- Eggs – 1-2 pcs.
- Sugar – 170 gr.
- Sunflower oil – 50 ml.
- Soda – 1/2 tsp
- Baking powder – 1/2 tsp
Step by step cooking recipe
- Mix the yolk with 100 grams of sugar.
- In a separate bowl, combine flour, salt and baking powder, add the egg-sugar mixture.
- Then, adding kefir, make the dough and let it reach for half an hour.
- Roll out the dough into a cake about a centimeter thick.
- Cut the gingerbread cookies with a glass, send to the oven (180 degrees) for 20 minutes – to become ruddy.
- Make a glaze from proteins and the remaining sugar – mix them.
- Cover the finished gingerbread with icing, send to the oven for another 5-10 minutes.
With chocolate
Ingredients
- Chocolate bitter – 100 gr.
- Wheat flour – 110 gr.
- Egg – 1 pc.
- Butter – 35 gr.
- Sugar – 60 gr.
- Cocoa powder – 1 tbsp.
- Powdered sugar – 1 tbsp
- Baking powder – 1/3 tsp
Step by step cooking recipe
- Heat the mixture of butter and chocolate pieces until everything dissolves completely. Then cool to room temperature.
- Beat sugar and eggs until foamy.
- Mix the beaten eggs and butter-chocolate thick with a mixer.
- Sift in the cocoa, baking powder and flour.
- Make the dough so that it does not stick to your hands, make a ball.
- Wrap in cling film and put in the freezer for twenty minutes.
- Take out the dough and make gingerbread out of it. Preheat oven to 180 degrees. Roll the gingerbread cookies in powdered sugar, put on a baking sheet with parchment and put in the oven for ten minutes.
