Simple and delicious: interesting Lenten dishes

“Cabbage or tops or finely chop the cabbage, boil it, and steam it harder … pour juice or some other kind of welding to add and evaporate again,” such a lean recipe can be found in the famous book “Domostroy”. It seems to be simple and hassle-free. In fact, lenten cuisine in Rus’ was quite interesting and varied – for all its modesty and limitations. Vegetables, dishes from mushrooms, millet and berries, various cooking methods – boiling, stewing, sourdough. Imagine a table with salted mushrooms, cabbage rolls, sauerkraut, pea soup or lean cabbage soup, pies, and numerous kissels. And you don’t need any meat or eggs.

  • Cabbage – 1/2 head (approximately 1 kg)
  • Crushed crackers – 4 tbsp
  • Vegetable oil – 2 tbsp.
  • Salt

Step by step cooking recipe

  1. Boil the cabbage until half cooked, slightly salted.
  2. Let the water drain.
  3. Fold each cabbage leaf in the shape of an envelope, fry in oil, roll in breadcrumbs.



  • Rice – 200 gr.
  • Ground white crackers – 4 tbsp.
  • Dry mushrooms – 4 pcs.
  • Onion – 1 pc.
  • Flour – 1 tbsp.
  • Vegetable oil, salt and sugar – at the discretion

Step by step cooking recipe

  1. Cook rice until soft.
  2. Send to the colander.
  3. When the water drains, lay out, pour a tablespoon of oil and let cool slightly.
  4. Blind cutlets, roll in breadcrumbs, fry on each side.
  5. Chop the onion.
  6. Boil mushroom broth.
  7. Fry the onion, add flour and fry everything together.
  8. Pour a glass of broth, mix and bring to a boil.
  9. Add salt and sugar, you can add lemon juice and raisins (after scalding it).
  10. Simmer until boiling.
  11. Pour the cutlets with this sauce.



  • Flour – 800 gr.
  • Live yeast – 30 gr.
  • Water – 2 glasses
  • Onions – 7-8 pcs.
  • Salt, pepper to taste

Step by step cooking recipe

  1. Make dough and leave for three hours.
  2. Fry finely chopped onion.
  3. Add salt and pepper.
  4. Roll into thin cakes, fry to brown.
  5. Put one of the cakes on the dish, on top – a tablespoon of onion (spread over the entire surface).
  6. Cover with another flatbread, put the onion again and cover with the flatbread again. Do this until the ingredients run out.
  7. Let the tortillas soak in the onion fry.
  8. Cut the onion like a cake, into pieces.

Sweet pie


  • Jam – 200 gr.
  • Flour – 400 gr.
  • Baking powder – 2 tsp
  • Sugar – 200 gr.
  • Water – 200 ml.
  • Vegetable oil – 200 ml.

Step by step cooking recipe

  1. Pour sugar into water, stir to dissolve sugar.
  2. Add butter, then flour (sifted) and baking powder.
  3. Make a dense elastic dough, lay out most of it in a mold with sides.
  4. Spread the jam, grate the rest of the dough and fill it with jam.
  5. Bake in the oven (180 degrees) for 30-40 minutes.
