Japanese pear pancakes #shrovetide2023

Cut the pear into 4 pieces, remove the seeds and cut into long slices about 0.5 cm thick.
Fan out the pear slices in the middle of the pan.
Place a skillet over medium heat, brushing it with vegetable oil first.
Wait for the pan to warm up and the pear slices begin to sizzle appetizingly, and then sprinkle with sugar (let the main part of it fall on the slices and between them).
Cover the pan with a lid and simmer the pears for 3-4 minutes until the sugar has melted.
While the sugar is melting, prepare the dough.
Combine the egg with milk, and mix with a fork or whisk until smooth.
Add all the sifted flour at once and, trying to limit yourself to a minimum number of stirrings, mix it into the mixture of liquid components (15-20 stirrings)
Add a pinch of salt, ground cinnamon, vanilla and baking powder to the dough.
Stir the dough one more time.
When the sugar melts, turn into sugar syrup and bubbling appetizingly around the slices of pears – pour the dough into the pan.
Close the lid and cook for 10 minutes over low heat.
After turning off the heat, remove the lid and cover the pan with a plate, turn it over so that the pancake is on the plate.
Sprinkle with powdered sugar if desired.
