Little apple pies – step by step recipe with photo
1. First, I prepare the filling for pies. I wash the raisins with water.
2. You can add any nuts to the filling (I have peanuts). I grind the nuts into crumbs.
3. I remove the zest from the orange, rubbing it on the smallest grater. Then I squeeze the juice from this orange.
4. Apples (it is better to take sweet red ones) I peel and core, and cut into small pieces.
5. I transfer the prepared apples to a saucepan with a thick bottom, add granulated sugar and 3 tablespoons of water. Cook for about 10-15 minutes until the apples are soft. For sour green apples, the amount of granulated sugar can be increased.
6. Then I add chopped nuts, raisins, cinnamon and orange zest to the apples in a saucepan. I mix well, if the filling crumbles, you can crush it a little with a spoon (crusher). The filling for Greek apple pies is ready.
7. I start preparing the dough. I combine orange juice, refined vegetable oil, powdered sugar, vanilla sugar, cinnamon, salt and orange zest in a bowl. I mix well.
8. In another bowl, mix the sifted flour with the baking powder.
9. Pour flour in small portions (!) into a container, mix well. First I knead the dough in a container, and then on the table. Flour may need from 250 to 300 gr. It took me 280 gr. flour. Focus on the dough, it should be very soft, not sticky, slightly oily, very pleasant to the touch. The main thing here is not to overdo it with flour!
10. I roll out the dough on the table with a thickness of about 5 mm. I cut circles with a glass.
11. I roll each circle a little more into a thinner one, spread a teaspoon with a slide of apple filling.
12. I wrap and connect the edges. I got 29 small pies (cup 5 cm in diameter). I spread the pies on a baking sheet lined with baking paper.
13. I bake in an oven preheated to 200 degrees for about 15 minutes (or until golden).
14. Little apple pies are ready. Then cool completely (so they taste better), if desired, you can sprinkle with powdered sugar.
