Marinated baked vegetables – step by step recipe with photo
1. Wash the pepper, cut off the tails and remove the seeds.
2. Coarsely chop.
3. Wash the zucchini well, cut into large cubes.
4. Peel the onion, wash, cut into half rings.
5. Wash, peel and cut carrots.
6. Mix all vegetables in a deep bowl. For the marinade, combine soy sauce, olive oil, sugar, crushed garlic and lemon juice. Pour marinade over vegetables, mix and leave for 1 hour. Stir the vegetables occasionally for an hour so that they are evenly soaked.
7. Wash cherry tomatoes, cut in half.
8. Transfer all vegetables to a baking dish along with marinade.
9. Sprinkle with Provencal herbs.
10. Bake in the oven, preheated to 200 gr., 40 minutes.
