Meat bags with tomatoes and mozzarella

Rub the loin with salt, smoked paprika and pepper on all sides.
Wrap in foil and place in a baking dish.
Bake for 1.5 hours in a preheated oven to 200 degrees.

Put the tomato puree, soy sauce, chili sauce, honey and sugar in a saucepan (I used white, but brown is better).
Grate or press garlic through a press.
Bring the sauce to a boil.

Remove the cooked meat from the foil.
Make deep transverse cuts every 1 cm, not reaching the bottom of 1 cm.
Salt the meat between each piece.
Brush the pork with glaze between the cuts, top and sides.
Bake for another 15-20 minutes.
