Mushrooms and scrambled eggs on toast

This recipe combines mushrooms and egg with toast and takes less than ten minutes to prepare. Anyone can cook it because it’s not difficult. It only takes six ingredients and some salt and pepper. High-protein breakfast made quick

This breakfast is prepared super fast, because after only 10 minutes it is on the table. It’s also very easy to do, like this:

  • Melt butter in two pans
  • Peel and chop the onion, and slice the mushrooms
  • Place onions and mushrooms in one of the pans, salt and pepper
  • Beat the eggs with a little salt and add to the second pan
  • Toast toast, spread with butter or herb butter and place on a plate, although a slice of “normal” bread can also be used here.
  • Roughly chop the parsley and add to the pan with the mushrooms
  • After about seven minutes, put the egg and the mushrooms on the plate and sprinkle with a little salt and pepper.

After talking about this breakfast all along, I want to explain what makes it so high in protein:

  • 100g of mushrooms contain around 3g of protein, which is more than most vegetables. In addition, there is a season all year round. In addition, they contain important minerals and nutrients. Among other things, there are B vitamins and folic acid. And mushrooms are virtually fat-free.
  • 1 egg (size M) contains about 11 g protein, which our body can utilize 100%. This is a particularly high-quality protein. And in addition to vitamin A, the egg also provides us with iron, zinc and various B vitamins. This also includes the important vitamin B-12, which is otherwise mainly found in fish or meat.

  • 3 EL Butter
  • 1 small red onion
  • 6 Mushrooms
  • 2 Owner
  • 1 slice of bread or 2 slices of toast
  • 3 sprigs of parsley
  • Salt
  • freshly ground black pepper

  1. Put 1 tablespoon of butter in each pan and melt at medium temperature.
  2. Peel the onion, chop finely and add to one of the pans. Clean the mushrooms briefly, cut into large slices and add to the pan with the onions. Add some salt and freshly ground black pepper and stir.
  3. Beat the eggs with about 1/2 tsp salt and pour into the second. Mix the egg with the butter in the pan and let it set. Stir every now and then.
  4. Pluck the leaves from the stalks, chop roughly and add to the pan with the mushrooms.
  5. To serve, toast the bread, brush with some butter and place on a large plate. Place the scrambled eggs on the plate and arrange the mushrooms next to them. Sprinkle with a little salt and more freshly ground black pepper if you like.

TIP: This breakfast tastes even better with herb butter. Finely chop 1 bunch of parsley, crush a clove of garlic with a fork and mix with 1/2 piece of butter. The herb butter can be stored in the fridge for about 5 days or in the freezer as a roll for about three months. Then you can use some of the butter whenever you want, as needed.
