Pancakes with avocado, feta and mussels

Break the eggs into a bowl, shake slightly, add salt, sugar, mix.

Pour in 1/2 cup milk, add the sifted flour and stir well so that there are no lumps.

After that, dilute the dough with the remaining milk.

Leave the dough for 30 minutes.

Fry pancakes in a preheated pan, lubricating the pan with vegetable oil and pouring the dough into the pan with a ladle, quickly turning it so that the dough spreads evenly and thinly over the pan.

Fry pancakes on both sides until golden brown.

Stack the pancake and keep warm.

For the filling, fry the mussels in a hot frying pan in a small amount of vegetable oil until golden brown (about 4-5 minutes).

Peel the avocado and cut into cubes.

Feta (I have no brine) cut into cubes.

Combine mussels, avocado and feta in a bowl.

Add the mustard to the olive oil, salt and pepper to taste.

Pour the dressing over the filling, mix.

Fold the pancakes in half, put 1.5 tablespoons on the edge of the pancake. toppings, roll pancakes to make “horns” and serve immediately.
