Pearl porridge with dried fruits
. Sort out pearl barley.
Rinse thoroughly in several waters until the water is clear.
Pour the cereal with cold water (about 1 liter) and leave to swell for several hours, overnight.
Soaking time is not included during cooking.
. Drain the water from the swollen barley.
Pour the required amount of water into the pan, bring to a boil.
Pour the cereal, let it boil again.
Salt a little, cook over low heat, stirring occasionally for about 1 hour (in total).
. While the cereal is being cooked, wash the dried apricots, pour hot water for 5 minutes.
Drain the water, dry the dried apricots.
. Cut dried apricots into small cubes.
. Wash dried cherries and pat dry.
. After about 40 minutes of cooking, put dried fruits into the porridge, mix.
Continue cooking until the cereal is cooked.
Wrap the pot with the finished porridge in a warm blanket and let it stand for 2-3 hours.
The time of “ripening” of porridge is not taken into account in the cooking time.
. Divide the prepared porridge into portions.
You can add honey or sugar to taste, I didn’t add anything, the sweetness of the fruit was enough for me.
