Pie with berries – step by step recipe with photo
For the filling, I use frozen berries, send them to a wide frying pan, add sugar and heat over the smallest fire, you need the berries to defrost and the sugar to dissolve.
As soon as the berries are thawed and covered with liquid, add cornstarch and mix so that there are no lumps.
Berries constantly stirring – brew.
From the moment of boiling, brew for a couple more minutes.
Let the berries cool to room temperature.
For the test, we take butter at room temperature, that is, soft, add sugar, vanilla sugar and salt.
Beat with a mixer for a couple of minutes.
Add a room temperature egg and stir.
In parts, we introduce the sifted dry ingredients (flour with baking powder) and knead a soft dough that does not stick to your hands.
Visually divide the dough into 3 parts, but cut into 2 parts.
We put 1/3 of the dough in a bag and send it to the freezer, and 2/3 of the dough – we form the bottom and sides of the cake in a 24 cm mold.
Place the dough in the refrigerator for 40 minutes.
After this time, we take out the form with the dough from the refrigerator and send the cooled berries into it.
We take out 1/3 of the dough from the freezer and rub it on a coarse grater.
Cover the pie with the resulting dough chips so that the berries are covered with dough.
Sprinkle the top of the cake with almond flakes.
Bake the cake in an oven preheated to 180 gr for 45 minutes.
Cool the finished cake in the mold for 30 minutes, then remove from the mold and transfer to a dish.
It is better to cut the cake completely cooled down, if you cut it warm, then the filling is not yet stabilized and it will probably flow out.
The cake turns out very tasty, with a lot of fragrant berries!
