Pie with rice and canned fish

Stir yeast and sugar in warm water until completely dissolved.

Add warm milk.

Make a well in the flour, pour in the yeast mixture and vegetable oil.

Knead the dough with your hands or with a mixer.

Knead the dough for 7-10 minutes, until smooth.

Add a little vegetable oil (1 tbsp.) And collect the dough into a ball, the dough is soft and elastic.

Cover the bowl with the dough with a plastic bag or a napkin and leave warm for 1 hour to rise.

Prepare the filling.

Boil the rice in a large amount of salted water, then put it on a sieve and cool.

Finely chop the onion and fry in odorless vegetable oil until transparent.

You can use any canned fish (pink salmon, saury, sardine, mackerel, etc.).

It is better to choose canned food without adding oil.

From canned fish (I have saury), drain excess liquid, mash with a fork into pieces, remove if there are large bones and a ridge.

In a bowl, mix boiled rice, fried onions with oil, fish.

Taste the filling and add salt and pepper if needed.

The dough has risen and increased in volume.

The risen dough is divided into two unequal parts, covered with a napkin and left for 10 minutes.

One larger part, this will be the bottom of the pie, roll it into a layer slightly larger than the size of the mold, no more than 0.5 cm thick.

Transfer the dough to a baking sheet greased with vegetable oil (size 32×24 cm), raise the sides.

Lay out the filling.

Roll out the second part of the dough, cover the filling, pinch the edges of the dough, make a hole in the middle of the pie for steam to escape. Cover the pie with a paper towel and let it rise for 30 minutes.

If desired, mix the yolk with milk (2 tsp), gently grease the cake, for golden brown.

Bake the cake for approximately 30-35 minutes at a temperature of 180 degrees in a preheated oven.

Grease a hot cake with odorless vegetable oil so that the crust is soft.

Cover with a towel, let the cake cool, then remove from the mold and cut into pieces.
