Pies with cranberries, sea buckthorn and apple
1. Let’s prepare the dough. We breed yeast in warm milk (100 ml). Add 1 tsp. sugar from the total amount and 3 tbsp. l. flour, mix until smooth. Cover bowl with clingfilm and place in a warm place until foamy.
2. Prepare the dough. Add 1 egg + 1 protein to the frothy dough (leave 1 yolk to grease the pies).
3. Pour 1 tsp. salt, the remaining sugar and vanilla sugar, mix until they dissolve.
4. Then pour in milk 100 ml, vegetable oil 2 tbsp. l. and stir in soft butter.
5. Sift the flour into the liquid mixture in small portions. Leave a little flour (1/4 part).
6. When it will be difficult to mix with a spoon, put the dough on the countertop. Add the remaining flour and mix into the dough.
7. Add the remaining vegetable oil (1 tablespoon) and knead a smooth, soft and non-sticky dough.
8. The dough is ready, sprinkle it with vegetable oil on all sides and put it in an oiled bowl. Cover the bowl with clingfilm and leave in a warm place for 1-2 hours, or until the dough doubles in size.
9. Prepare the filling. Berries do not defrost.
10. Peel the apple and three on a coarse grater.
11. Heat up the butter and melt the sugar. We put one variety of berries (sea buckthorn) and 1/2 part of an apple. Simmer for 5 minutes.
12. Then add 1 tsp. starch and continue cooking. While stirring, bring the fruit mixture to a thick consistency. The consistency is like a thick jam.
13. Cranberries are prepared in the same way.
14. The dough has increased, it has become airy and soft, we punch it down.
15. And divide into 2 parts. We cut one part of the dough, put the other in a transparent bag. I have 2 pies, and the filling is also for 2 pies.
16. Dust (a little) the countertop with flour and roll out the dough into a circle, Ф = 35-40 cm. Cut into 8 parts. Cutting out a circle, trimmings remain, roll them up and into a bag – this will be the middle of the pie.
17. Lay out the filling.
18. Close the filling around the edges and fold, form bagels.
19. We cover the form Ф = 26 cm with baking paper, grease with butter and lay out the bagels, form a pie.
20. Cover the pie with a film or a light towel and leave it in a warm place for 30 minutes. Then grease the pie with whipped yolk (with 1 tbsp milk + 1 pinch of sugar).
21. And bake the cake in an oven preheated to 180 C, for 30-35 minutes or until done. Happy tea drinking!
