Plum tkemali with vinegar for the winter

I bring to your attention my version of the popular seasoning. I cook plum tkemali with vinegar. I prefer not to add hot peppers, because I don’t always want to season food with hot sauce. Fruit should be slightly underripe.

Step by step cooking recipe

Rinse the plums, cut in half and remove the pits.

Place the fruit halves in a saucepan, cover with cold water and boil for 10 minutes.

Drain the plums in a colander, cool slightly, and then rub through a sieve.

Mix the resulting puree with spices, sugar, salt and garlic passed through a press. Boil the workpiece over low heat for 15 minutes.

Add vinegar, stir and remove from heat after 1 minute.

Spread the hot sauce in the prepared container, roll it up and wrap it in a warm blanket for a day.
