Pork knee

First of all, we cut out the bone from the pork knuckle.
Inside we send sprigs of thyme and rosemary.
Then we send the pork in a vacuum bag, season the meat with spices.
Pour in soy sauce, beer, pump out air and send to the oven at 60 degrees for 3 hours.
Then we take the shank out of the bag and send it to the oven at 200 degrees for 20 minutes.
