Quesadilla with potatoes

. Boil potatoes until tender
. Knead dough for tortillas:
• add salt and butter to the flour
• grind flour with butter
• add water – knead soft and non-sticky dough
• wrap the dough in cling film and leave at room temperature for 15-20 minutes
. Prepare mashed potatoes:
• drain all the broth from the finished potato
• mash potatoes until pureed
• add butter to mashed potatoes – once again mash everything well with a potato crusher
• add grated cheese (Parmesan or Grano Padano), salt and pepper to the puree
• Grind everything well again until smooth and creamy.
• cover the puree with a lid and set aside for now
. Prepare tortillas:
• put the dough on a floured surface, knead lightly and divide into 6-8 parts
• round the pieces of dough – cover 7 pieces with cling film and set aside
• roll out the rest of the dough into a round cake, 2 mm thick
• fry the cake in a hot and dry frying pan on both sides (30-40 seconds on each side)
• prepare the tortillas in the same way using the remaining pieces of dough
. Cheese (mozzarella) grate on a coarse grater, chop the greens
. Form the quesadillas:
• put some grated cheese on half of the tortilla
• put a little (about 1 tbsp with a large slide) mashed potatoes on the cheese – smooth
• put some more cheese on the puree
• cover the filling with the second half of the cake and press lightly
. Fry the quesadillas on both sides in hot vegetable oil until golden brown.
