Recipe: Cheese Tortellini

Step by step cooking recipe

Prepare dough:

add turmeric to the sifted flour – mix

add egg and yolk – collect in a ball

knead the dough for 5-10 minutes

wrap the dough in cling film and leave on the table for 20-30 minutes

Prepare the filling:

finely grate parmesan and mozzarella

add ricotta and mix

add spices and salt – mix

add egg white – mix

Form the tortellini:

roll out the dough into a thin layer (the thinner the better)

cut the dough into squares, 5×5 centimeters in size

put 0.5 teaspoon of filling on each square

connect the edges of the dough so that a triangle is formed with the filling inside

connect the two long ends of the triangle to each other

Put a pot of water on the fire – add salt to taste and bring to a boil

Put tortellini with cheese into boiling water, bring to a boil again and cook for 2-3 minutes.

Prepare thyme oil:

melt butter over low heat

add thyme

Stirring occasionally, cook the butter for 2-3 minutes (until transparent)

Place the finished tortellini on a serving plate and drizzle generously with thyme oil.
