Recipe: Mititei
Step by step cooking recipe
To make the mitites juicy and tasty, I use two types of meat.
It’s beef and fatty pork.
I skip the meat in a meat grinder along with garlic.
I add salt, ground black pepper, cornstarch and baking soda to the minced meat.
If you only have potato starch, use half the amount.
I mix all the ingredients.
In order to end up with juicy mitites, you need to mix 200 ml of sparkling water into the minced meat.
There are recipes where milk or plain water is mixed in.
In the absence of sparkling water, you can try.
But I still recommend using highly carbonated water.
After intervening the water, the minced meat must be beaten off.
I pick it up from the bowl and force it back in.
This action must be repeated for at least 10 minutes.
So the minced meat will become denser and the finished mitites will not fall apart during cooking.
I cover the bowl and send the minced meat to the cold for 5-6 hours.
After the time has elapsed, I mix the minced meat again and beat it several times.
I make sausages out of it.
I have a special grill pan for a gas stove.
If you do not have one, then you can bake them in the oven, on the grill.
And if you can cook them on the coals, on the grill, it’s even better.
Well, if it is not possible to cook them using one of these methods, then just cook them in a pan.
For those who have a frying pan like mine.
I put some water in it.
Grease the grate with sunflower oil.
I spread the mitites and cover with a lid.
I turn on the stove to the lowest possible burner flame.
Cover with a lid and cook for 20-25 minutes.
While the mitites are being prepared, I will prepare a salad, which is traditionally served with them.
Shredded cabbage, with carrots, onions and herbs.
Salt, ground black pepper and a little lemon juice.
I mix it all up and put the salad aside.
The mitites are browned on one side and it’s time to turn them over.
Cover again and cook another 10-15 minutes.
Here are such ruddy outside and juicy inside mititei obtained if you follow the recipe exactly.
Before serving, dress the salad with sunflower oil and mix.
And be sure to serve mustard to the mitites.
But today’s restaurants and cafes also serve a choice of ketchup or mayonnaise.
Do not eat mititei with these sauces.
Try it with vigorous mustard. This is delicious.
