Recipe: Poppy braid

Step by step cooking recipe

For the test: add sugar, salt and dry yeast to warm milk, mix and leave for 10-15 minutes.

During this time, foam should appear on the surface.

Although the yeast is fast acting, I still like to pre-activate it.

As soon as the foam appears, add the egg at room temperature, mix.

Why do we add the sifted flour in parts, I added it in three stages.

After all the flour has been introduced, add vegetable oil and knead the dough for at least 5 minutes.

The dough is soft and sticks to your hands a little, but do not add more flour, otherwise the dough will be hammered with flour and it will not turn out so soft and fluffy.

We make a ball from the dough, put it in a bowl and send it to proofing in a warm place (without drafts) for about 2 hours.

I proof the dough in a slow cooker on the yogurt program (40 gr) for 1 hour.

The bowl of the multicooker must be lubricated with vegetable oil.

For the filling: wash the poppy seeds, fill with warm water and leave for 30 minutes.

Then we drain the water and scroll the poppy seeds in a meat grinder 2 times.

To reduce the cooking time, I pierced the poppy with a blender, a knife attachment.

But the result is not the same, the blender is not crushed like a meat grinder.

Definitely poppy is better to scroll through a meat grinder.

I add apricot jam to poppy seeds and pierce with a blender for about 4 minutes.

The filling is ready.

After proofing, the dough turns out to be lush, porous and no longer sticks to hands.

I spread the dough on a silicone mat, on which I will bake.

Punch down the dough a little and roll it into a rectangle, the thickness of the dough is 5-7 mm.

We spread the poppy seed filling on the dough and evenly distribute it over the entire layer.

Do not reach the final 1.5-2 cm.

Roll the dough with the filling into a roll.

We pinch the edge along the entire length of the roll and also on the sides.

We turn the roll over with the seam down and cut it into 2 parts, not reaching the edge of the roll.

Then we put each part on top of each other to make a pigtail and then turn it into a circle to make a round braid.

Let the pie come up for 20 minutes, and then take 1 egg and 1 tbsp of milk and shake with a fork, and then grease the pie.

We send to bake in an oven preheated to 180 degrees for 35-40 minutes, but be guided by your oven.

It turns out a magnificent cake, in which there is a thin soft dough and a lot of poppy seed filling.
