Cut the duck. For a tasty and rich soup, a duck carcass is enough.
Cut it into small pieces.
Rinse with cold water and put to boil.
Before boiling, a little foam may appear.
Remove it carefully and discard.
If desired, you can add one whole onion, 1-2 bay leaves and a few black peppercorns to the broth if desired. Boil the broth for 30-40 minutes.
Before adding the rest of the ingredients from the broth, it is advisable to remove the onion and bay leaf.
Peel potatoes and cut into cubes.
Rinse rice well with cold water.
Add them to the broth and cook for 7-10 minutes.
During this time, peel and grate the carrots.
If desired, you can add a little celery roots, parsley, parsnips.
They are also rubbed on a grater.
Add the roots to the pot.
Now salt the soup to taste and cook until tender. It’s another 10-15 minutes.
At the very end of cooking, add finely chopped greens to the #soup.
Cover with a lid, turn off the heat and let the soup brew a little – 10-15 minutes.
