Recipe: Tangerine Cake

. Prepare ingredients:

• remove the zest from tangerines and then peel

• Pour the pulp of tangerines with a small amount of water and bring to a boil, and then remove from boiling water and transfer to a bowl for an immersion blender

• grate ginger on a fine grater – add to tangerines

• fry tangerines with ginger with an immersion blender

• grind tangerine-ginger puree through a sieve

• chop the nuts into very fine crumbs or flour

• mix nuts, flour and baking powder

• melt butter

. Beat the eggs with the addition of salt and sugar in a lush cream-colored foam

. Add tangerine-ginger puree, zest and melted butter to the egg mass – mix

. Add dry ingredients – mix

. Pour the dough into a mold (diameter – 18-19 cm)

. Bake for 50-60 minutes in an oven preheated to 160 degrees

. Prepare decor:

• mandarin cut into rings 5 ​​mm thick

• Boil mandarin rings in syrup (50 g of sugar per 100 ml of water) for 1-2 minutes

• cut mandarin rings into halves and quarters

• prepare glaze: mix powdered sugar and tangerine juice

. Drizzle the finished and still hot cupcake with icing and garnish with halves / quarters of tangerine rings, almonds and mint (optional)
