Recipe: Turkey Goulash Soup
1. Cut the thigh fillet into medium-sized pieces.
2. Cut the carrots, onions and garlic very finely.
3. Remove the seeds from the pepper and cut into small cubes. Cut the zucchini into the same cube – I removed part of the peel and the middle with seeds.
4. Drain the liquid from the beans, rinse and drain.
5. Put the pan on medium heat, pour in vegetable oil and add butter. Drop the turkey into the hot oil and cook for 10 minutes, stirring occasionally.
6. Add carrots, onions and garlic. Stir, cover and cook for 5 minutes.
7. Add zucchini, peppers, pureed tomatoes and tomato paste. Mix. Cover and cook for another 5 minutes.
8. Add beans, salt, sugar (I took 2 tsp – the tomatoes were sour) and chili to taste, paprika, black pepper, thyme, pour boiling water and cook under the lid for another 10 minutes. Adjust for salt and sugar. Sprinkle with chopped herbs
