Red fish rillette with capers and sun-dried tomatoes

Step by step cooking recipe

Cut the fish (I have Far Eastern salmon) into two fillets.

Put 50 gr. butter

Turn on the heating of the stove below medium.

Put the fish fillet skin side down, a sprig of rosemary into the oil and simmer the fish, pouring melted butter on top.

Avoid frying the fish, it should remain juicy and tender.

Remove the skin from sun-dried tomatoes.

Chop tomatoes, capers.

Cut the finished fish into pieces, removing the bones.

Add tomatoes, capers and onion marmalade.

Salt, pepper, a little sugar and lemon juice to taste.

Melt the rest of the butter in a pan, adding pink, white and black peppercorns.

Arrange the rillette in jars and pour over the melted butter and pepper.

Put in refrigerator.
