According to one version, the royal gooseberry jam with nuts was once presented to Catherine the Great by an old cook. The recipe for this delicacy has survived to this day. Anyone can cook it. I’ll tell you the recipe in detail.
Step by step cooking recipe
Pour gooseberries with ice water for 2 hours.
Boil water, add cherry leaves and boil for 5 minutes.
Cool and strain through cheesecloth.
Mix the resulting broth with vanilla, vodka, sugar and boil for 2 minutes.
Place the gooseberries in a large saucepan, cover with hot syrup and leave covered for 30 minutes.
Dry the walnuts in a frying pan, and then wipe off the excess husk.
Grind the nuts in a blender or finely chop with a knife.
Place the pan with gooseberries over low heat and bring to a boil. Pour in citric acid, nuts and cook for 15 minutes, stirring occasionally.
Arrange the hot jam in sterilized jars and roll up.
