Salad with beans for the winter – a simple and tasty recipe, how to cook step by step
Today I will share an interesting recipe for bean appetizers with vegetables for the winter. Such a protein-rich salad will diversify your Lenten table and become a real lifesaver when there is sorely lacking time for cooking.
Step by step cooking recipe
Rinse beans under running water and soak for 3-4 hours. Then rinse the beans again with clean water, place in a saucepan and boil until tender over low heat.
Wash and clean vegetables. Grate the carrots on a coarse grater, cut the onion into small cubes, bell pepper into thin strips.
Roast the carrots for 10 minutes.
Bring tomato juice to a boil, add salt, sugar and vegetable oil, mix and boil for 10 minutes.
Add carrots to the tomato and boil for another 10 minutes.
Add the onion and bell pepper, stir and cook for another 10 minutes.
Add boiled beans to the rest of the vegetables, mix and simmer over low heat for 25 minutes.
15 minutes before readiness, add bay leaf and allspice, pour in vinegar.
Place the hot blank in prepared sterile jars, roll up and cool.
