How to store lemons in salt

To store lemons in salt, the first thing you need to know is which lemons to use. Our advice is to opt for winter ones with a thicker skin. In fact, the latter will be the protagonist of your recipes. Secondly, better opt for lemons organic or in any case not treated precisely for the reason we talked about before, that is the use of the peel.

  1. That said, get yourself one good size pot fitted with a lid and get to work.
  2. Wash and dry the lemons, then cut them first in half and then in quarters lengthwise, making sure that they remain firmly attached to one of the two ends.
  3. Put in the center a generous spoonful of salt then close with your hands pressing a little and place it inside the vase.
  4. Do this until it is full. Choose the size of the jar based on the number of lemons you want to keep.
  5. Then close the lid and wait a day. By this time the citrus fruits will have released their juice and the liquid should completely cover the fruit. If not, add water as needed.
  6. Then put it in a cool, dark place and leave the lemons in salt to rest for a couple of weeks before using them.

How to use salted lemons

To use them, simply remove them from the container with a clean spoon (never with dirty hands or cutlery because colonies of bacteria could form which would ruin their conservation) and rinse them under running water.

Then cut the diced zest and use it in your recipes. From falafel sandwiches to risottos, this ingredient will give the dish a truly unique flavor. Furthermore, it is also excellent for blending and used in sweet preparations and an infallible method of conservation.
