Shrimp bisque – step by step recipe with photo

. Prepare ingredients:

• Peel shrimp – all you need is the shells, heads and tails (as well as a few whole, unpeeled shrimp)

• chop onion, carrot and garlic

. Heat a mixture of oils (vegetable + butter) in a frying pan or pan with a thick bottom.

. Saute chopped vegetables in hot oil mixture (2-3 minutes_

. Add shrimp shells / heads / tails and whole shrimp (if used) to vegetables – fry for 2-3 minutes (until shrimp shells turn red)

. Add tomato paste – mix and fry for 3-4 minutes

. Add wine – stir-fry until wine evaporates

. Add water or broth

. Add spices (thyme, oregano, pepper, salt) – mix

. Simmer the contents of the pan for 10-15 minutes

. Take out whole shrimp – peel

. Return the shells from the peeled shrimp back to the pan – simmer the bisque for another 10-15 minutes

. Remove the pan from the heat and grind the contents of the pan with a blender

. Strain the resulting mass through a sieve.

. Add cream to shrimp bisque – mix

. Pour the bisque into a saucepan or pan, bring to a boil, and then remove from heat – the bisque is ready

. When serving, garnish with peeled shrimp, a few drops of cream and chopped green onions.
