Let’s prepare yeast dough.
Warm milk, yeast, sugar, mix and leave for 15 minutes, give time for the yeast to activate.
In another bowl, whisk together egg + protein, salt, vanilla sugar, melted butter.
Combine the egg-butter mixture with the yeast mixture, mix.
Do not forget that all products for yeast dough should be at room temperature.
Then add the sifted flour in parts and knead the dough.
Do not rush to add all the flour that is indicated in the recipe, flour is different with different moisture content and it may need a little less or more than indicated in the recipe.
Grease the dough and bowl with vegetable oil.
Cover the dough with plastic wrap and leave warm for 1-1.5 hours.
During this time, the dough should double in volume.
This is how the dough came up, you can make buns.
Lubricate the working surface and hands with vegetable oil.
We spread the dough, punch down, cut the dough into small pieces.
We form balls (12 pieces approximately 75-80 g each), do not add flour.
We grease the form with oil and lay the future buns.
Cover with foil and leave for another 30-40 minutes to rise.
Prepare a crumb.
In a bowl, mix flour with sugar.
Add chilled butter, rub into crumbs.
Lubricate the buns with an egg (mix the yolk with 1 teaspoon of milk) and sprinkle crumbs on top.
Bake in a preheated oven at 180 degrees for 20-25 minutes.
Put the finished buns on the wire rack and cool.
