Preparing the recipe for gratin dauphinois

  1. The first thing to do is wash and peel the potatoes; then, cut them into very thin slices with the help of a mandoline if necessary.
  2. Pour the milk into a saucepan and put it on a moderate heat to warm it up. Once done, add the garlic chopped and flavored with nutmeg, salt and pepper.
  3. Stir and then turn off the heat.
  4. Shell the eggs in a bowl and bang them; to these, add the hot and flavored milk and the liquid fresh cream. Stir to mix everything.
  5. Take a baking dish and butter the inside of it. Spread a first layer of potatoes.
  6. Pour half of the egg, milk and cream mixture, then add half of the grated gruyere cheese.

  8. Enrich the surface with a few tufts of butter.
  9. Let it cook in the oven at 180°C for 90 minutes. At the end, leave the dish in the oven for a few more minutes, then you can serve.


Gratin dauphinois is a tasty dish, crunchy on the outside and soft on the inside. You can save it for 1 day in the fridgein an airtight container.
