Fried desserts are the undisputed symbol of Carnival and this party cannot be said to be such if you don’t try your hand at making Carnival roses at least once. We could describe them as chatter in the shape of a rose which, thanks to frying, takes on more than just one unique crunchinessbut also an ftruly spectacular footprint.
It is customary to prepare roses with custard but nobody forbids you to change the filling and use, for example, Nutella or a teaspoon of jam. The flower-shaped chiacchiere, however, are also good in purity, decorated just with a sprinkling of powdered sugar and some colored tails, just like the traditional recipe. How to prepare the carnival roses recipe
Combine the flour, sugar and vanilla extract in a bowl and mix.
Then add the butter cut into pieces, the eggs and the Marsala and mix with your hands until you get a smooth dough.
Wrap it in cling film and let it rest in the fridge for an hour.
After the rest time, roll out the dough as thin as possible, also using the pasta machine if necessary.
With three flower-shaped cookie cutter of size to scale (one of about 8 centimeters, one of 6 and one of 4) get as many flowers as possible but in order to have the same number of flowers 8, 6 and 4 cm in diameter.
To create a rose you will have to overlap the 3 figures different sizes by staggering the petals, to do this make sure you moisten the center of the two largest flowers with water. After making one, proceed in the same way with the others (you should be able to make them at least 8-10).
Heat abundantly seed oil and start preparing the fried roses one at a time. To obtain the characteristic shape you have to keep them pressed lightly on the bottom of the pan with the back of a ladle. This way they will swell without separating
Gently drain them with a slotted spoon, pass them on absorbent paper and serve them by placing a teaspoon of custard in the center and a candied cherry.
The final touch that will make your flower frappe beautiful is a sprinkling of powdered sugar.

Baked Carnival Roses: the light variant
It is then possible to obtain a slightly lighter version by preparing the rose-shaped Carnival chiacchiere cooked in the oven. Once the three flowers of different sizes have been combined, arrange them on a baking sheet lined with parchment paper and cook them at 180°C for 12 minutes, just long enough for them to become crunchy. As for the fried version, also in this case the addition of the filling is at your discretion.
Like all fried sweets, carnival roses go too consumed at the moment because with humidity they tend to lose their crunchiness.
