Asparagus with eggs is a delicious dish that can be prepared in many different ways.
Asparagus and eggs make up a genuine and much appreciated dish, typically spring. The delicate taste of asparagus is in fact enhanced by the egg, and in particular by the rossocreating pleasant sensations on the palate.

How to cook asparagus with eggs
1. Start by cleaning the asparagus leaving the tips and the tenderest part of the stem intact, then cook them for at least 20 minutes in steam or boiling water.
2. When they are ready, anoint a pan with some butter and put the asparagus in it.
3. Then break the eggs on top and leave to cook until the white is cooked.
4. Once ready, serve the asparagus with a grated of Parmesan, salt and pepper.

How to cook asparagus with scrambled eggs
1. If you want to make a scramble instead, start with the eggs, which you can also refine with a drop of milk or cream.
2. Cook them banging them in a pan with a fork, then add the asparagus and season to taste.
Asparagus and boiled eggs
1. If you want to make this dish, all you have to do is cook the asparagus and make it to boil the eggs until they have become the consistency you like. Put them in immediately, when the water is still cold, and once it starts boiling, wait approx 8-9 minutes.

Asparagus and poached eggs
The same goes for cooking asparagus, which you must to boil or steamed. Meanwhile prepare the poached eggs by doing Attention not to cook them too much.
1. Heat the water in a saucepan, add a little vinegar and create a vortex into which you will drop the egg.
2. After a few minutes you will have your poached egg which you can drain with a slotted spoon.
3. Once the eggs are ready, set them aside and switch to gratin the asparagus placing them on a pan lined with oven paper. Sprinkle with grated Parmesan and add a drizzle of oil.
4. Leave the asparagus in the oven for about 5 minutes, until the cheese, fusingwill not have formed a crunchy crust.
5. Serve everything in a deep dish, placing the eggs delicately so as not to break them and adding a pinch of salt and a quick dusting of pepper.

This dish, and all its variants, should be enjoyed as soon as it is ready, with hot asparagus and eggs just plated. This preparation is not recommended to be stored in the fridge, however you can leave the asparagus in the fridge for a maximum of 2 days covered in transparent film. We do not recommend freezing.
