The arrival of Primavera really deserves to be honored with a party. Finally, after months of cold and dark, the days have lengthened and the plants are beginning to repopulate with leaves. To celebrate all this, we really need the Spring Cake!

Layers of soft sponge cakestuffed with panna e mascarpone and decorated with strawberries, the fruit that most of all represents the season, are the components of this very simple but at the same time refined dessert. In fact, the preparation does not take much time, but the result is one stuffed cake which could also be very well as a birthday cake.

How to prepare the spring cake recipe

  1. To prepare the spring cake, start with the sponge cake. Break them egg at room temperature in a bowl and add it sugar.
  2. Work with electric whisks, or in a planetary mixer equipped with a wire whisk, at maximum power. The compound will have to triple in volume.
  3. Flavor it with vanillin then add the farina sieved, little by little and mixing with a spatula. Movements must be delicate and from bottom to top.
  4. Pour the dough into a pan lined with parchment paper of the diameter of 24-26 cm and bake in the oven 180°C for 35 minutes.
  5. Remove from the oven and let it cool completely before cutting it.
  6. In the meantime, dedicate yourself to the cream. First mix mascarpone e powdered sugar until you get a cream.

  14. Put the other sponge cake disccover it with the crema advanced and finally decorated with the strawberries left, after having washed them, and gods edible flowers.

We advise you to leave the cake in refrigerator for at least one night before consuming it. If you wish, you can fill it with cream and strawberries and complete the decoration on the surface with strawberries and flowers just before serving.
