Tomatoes in their own juice for the winter
Whatever marinade I try, the most delicious are tomatoes in their own juice. For this recipe, you can buy separately soft tomatoes and separately dense ones. So you don’t have to sort them, which means you can save valuable time.
Step by step cooking recipe
Rinse and sort the tomatoes: put soft and large on one side, dense and small on the other. If all the vegetables are the same, just cut them in half.
Cut soft tomatoes into small pieces, remove green veins and damaged areas. Pass the tomatoes through the juicer.
Pour the juice into a heavy bottomed saucepan and bring to a boil over low heat. There will be a lot of foam, stir and it will fall. Pour sugar, salt, citric acid and cook for 20 minutes.
In prepared jars, place the bay leaf and a mixture of peppercorns. Shaking the jar occasionally, pack the small tomatoes tightly.
Boil water in a separate saucepan, fill the jars with tomatoes to the top, cover with lids and leave to warm up for 20-30 minutes.
Drain the water. Instead, pour boiling tomato juice into jars. Roll up, turn upside down and wrap well with a warm blanket. Well-warmed jars are perfectly stored for several years and never “shoot”.
