Vegan Christmas log: the recipe for one of the typical holiday sweets

The Yule log is a typical dessert of the end of the year holidaysat least in some areas of Northern Italy, and yours vegan version it is suitable for everyone, therefore perfect for dinners with many guests with different needs and tastes.

The tradition of the Yule log

His origin and French and refers to Northern European tradition of the Yule log. Once upon a time, on Christmas Eve the head of the family would light a log of wood which was to burn in the fireplace until Epiphany. The bûche de Noël is a cake in the shape of a tree trunk. In the original recipe, the biscuit dough base is covered with a dark chocolate ganache and filled with wild berry jam. Today, as with other traditional Christmas sweets, there are several reinterpretations. The shape of log can be simple or more complex, the fillings are varied and the chocolate that covers the cake can be dark, milky or white. There are even savory Yule log recipes.

The vegan Christmas log recipe

For the biscuit dough:
• 160 g of manitoba flour
• 40 g of corn starch
• 12 g (2 heaped teaspoons) sourdough cream of tartar base
• 140 g of brown sugar
• 100 g of vegetable butter or margarine
• 180 g of vegetable milk
• 2 g of veg xanthan gum (1 small coffee spoon)
• 1 pinch of salt
For the filling:
• 250 g of vegetable milk
• 20 g of corn starch
• 50 g of dark chocolate
• 3 tablespoons of Agave or maple syrup
For coverage:
• 300 g of dark chocolate
• 200 g of vegetable cooking cream


After preparing the cream, let’s put it aside and let it cool. Meanwhile, let’s prepare thecookie dough dough, mixing first the dry ingredients and then adding the milk and previously melted butter. We put the dough in the oven, spreading it out to form a rectangle at least 1 cm high and let it cook for 15 minutes at 180º. Once cooked (not too much otherwise dry), let it cool then proceed to stuff and roll the dough along the long side of the rectangle, being careful not to break it. Let it cool, then cover the roll with the cream and chocolate cream and decorate as desired.
