Vegetable and Tuna Fajitas

One of the most famous foods not only in Latin America, but in bars, and restaurants around the world with the main ingredient being a corn pancake.

This healthy tuna fajitas recipe, accompanied by a rich Mexican sauce, is one of the most famous dishes prepared easily, made with a variety of fillings, and served with hot sauces.

In fajitas, the traditional dish, the classic recipe, the dough is made with cornmeal or wheat flour but without yeast so that the dough comes out thin and tasty. We can change the tuna for the chicken and we can grill the vegetables to make it more delicious.


  • 1 large can of tuna.
  • 2 carrots
  • 1/2 zucchini
  • 1 onion
  • 1 green pepper
  • 1 red bell pepper
  • 1 jet of oil
  • Salt to taste

We thicken by cutting the onion, julienned carrots, also green and red peppers. In a separate frying pan, heat the vegetable oil, fry for 2-3 minutes, then the onions and peppers. Sauté until the transparency of the onions, we add tuna.

Season with salt and herbs if desired. Fry everything together for about 5 minutes, stirring constantly, so it doesn’t burn.

You can put it if you don’t like beans that are like pinto beans and simmer everything together for 7-10 minutes.

To give it a spicy touch we add Jalapeño, which is a very hot medium-sized chile. The name comes from the city of Xalapa, Veracruz, where hot peppers are traditionally grown.
