Warm Roasted Pumpkin and Couscous Salad

Step by step cooking recipe

Peel the skin off the pumpkin, cut into pieces.

Peel sweet pepper and cut into pieces.

Onion cut into slices.

Line a baking sheet with foil for convenience and lay out all the chopped vegetables.

Salt a little, sprinkle with Provence herbs and drizzle with vegetable oil.

Put in the oven preheated to 200 degrees and bake for 30 minutes.

Pour couscous into a bowl and pour boiling water over it, cover with a lid and leave to swell for 15-20 minutes.

Prepare the salad dressing by mixing the above ingredients.

Beat with a fork until emulsified.

Put the baked vegetables on a beautiful plate and pour over some of the dressing.

Mix and leave for 5-7 minutes to soak.

Add couscous to vegetables and season with salt.

Wash lettuce, dry and cut into large pieces.

Add to salad.

Mix everything well and pour over the remaining dressing.

Warm salad of baked vegetables and couscous is ready.
