The Far East was and is inhabited by local peoples, immigrants from other republics of the former USSR and Russian regions, as well as migrants from China and Korea. As a result, the cuisine of the Far East is a “compote” of the culinary traditions of the indigenous people, Russian / Soviet cuisine, Asian “chips”. Everything is heavily involved in the richness of the region’s products. These are taiga wild plants (nuts, ferns, berries and mushrooms) plus fish and seafood. Mussels, sea cucumbers, scallops and oysters, sea urchins and crabs – the choice is huge. All own, all fresh. You can imagine how delicious it is. Below are some recipes with products that can be found outside the region.
Fish soup with nettles (a Nanai dish)
Ingredients
- Fish – 500 gr.
- Onion – 1 pc.
- Nettle – 100 gr.
- Water – 1.5 ml.
Step by step cooking recipe
- Separate the meat and bones of the fish.
- Meat cut into small pieces.
- Boil bones, onion and a few black peppercorns, put pieces of fish there, cook until tender.
- Sort and wash the nettles, chop finely and send to the pan for about five minutes before the broth is ready.
Fern with pork
Ingredients
- Fern – 1 kg.
- Pork – 800 gr.
- Onion – 1 pc.
- Soy sauce, salt to taste
Step by step cooking recipe
- Soak the fern for 24 hours in salted water.
- Then drain the water and rinse.
- Place in boiling water for 9 minutes.
- Fry finely chopped onion until transparent.
- Finely chop the pork and add to the onion, fry not until fully cooked. Throw the fern into a colander, put it on the meat, pour in soy sauce. Cook for five minutes.
Pyan-se (Korean pies, which appeared, however, in Vladivostok)
Ingredients
- Dough (ready)
- Minced meat – 300 gr.
- White cabbage – 500-600 gr.
- Onion – 1 pc.
- Garlic – 2-3 cloves (to taste)
- Vegetable oil – 5-6 tbsp.
- Sol – 0.5 tsp.
- Ground black pepper – 1 tbsp.
- Any spices to taste
Step by step cooking recipe
- Finely chop the garlic and onion, mix with minced meat.
- Shred cabbage, put in a pan and simmer for 15 minutes.
- Allow to cool slightly, mix in a pan with minced meat and spices, add salt.
- Make a sausage from the dough, cut into pieces (10-12).
- Roll out, put in the middle of the circles in portions of minced meat, make pies, leave for 20 minutes.
- Dip each pie in oil and put in a double boiler for 20 minutes.
- Then turn off the steamer and leave the pies there for another 10 minutes.
Cod casserole
Ingredients
- Cod fillet – 500 gr.
- Onion – 1 pc. (large)
- Tomato – 1-2 pcs.
- Zucchini – 2 pcs.
- Carrot – 1 pc.
- Hard cheese – 50 gr.
- Bulgarian pepper – 2 pcs.
- Cream – 300 g (15%)
- Vegetable oil, salt, spices and pepper
Step by step cooking recipe
- Cut carrots, peppers and zucchini into strips, fish into cubes,
- Cut the bell pepper, carrots and zucchini into strips, the tomato into slices, the fish into cubes, and the tomatoes into circles.
- Fry vegetables in a pan, add cod and cook for another seven minutes.
- Put a little butter there, mix everything and cook further – until the vegetables give up water.
- Add sour cream, salt and pepper, mix.
- Put everything in a baking dish, grate cheese on top and bake in the oven (180 degrees) until crusty.
